SALT has won Politiken’s Nordic Fork prize
With a modern version of the old Danish speciality applepork, Rasmus Møller Nielsen, head chef at SALT, scored the victory at the food fair Nordic Taste.
30 Scandinavian restaurants served tastings of the best food from the Nordic region. Rasmus Møller Nielsen had drawn inspiration from the classic Christmas Food, and the hungry guests was so thrilled with his spicily corned pork with onion purée, apple vinaigrette and crumble of malt and crispy crackling, that they elected him the winner of the Nordic Fork prize, founded by Politiken, one of Denmark’s most accredited newspapers.
”Pork, apple and onion is the best ingredients of the season and perfectly unite the rich, acidulous, sweet and salty taste,” the chef explains.
